Ingredients

  • 1 cup Baguette diced into bite sized pieces
  • 2 tsp Extra-virgin olive oil
  • 2 cups Romaine lettuce chopped
  • 8 Grape tomatoes halved
  • 1/2 cup Cucumber sliced into half circles
  • 2 tbsp Carrots shredded

Dressing

  • 3 tsp Extra-virgin olive oil
  • 1 cloves Garlic grated
  • 1/4 tsp Dijon mustard
  • 1 tsp Red wine vinegar

Instructions

  • Preheat oven to 350 degrees. Toss the croutons with oil and season with salt and pepper. Place on a baking sheet and bake for 10 - 12 minutes until croutons are crunchy and golden brown. Set aside to cool.
  • In a bowl whisk together all the ingredients for the dressing until fully combined.
  • Toss all ingredients together with the dressing before serving.
