Ingredients
- 1 cup Baguette diced into bite sized pieces
- 2 tsp Extra-virgin olive oil
- 2 cups Romaine lettuce chopped
- 8 Grape tomatoes halved
- 1/2 cup Cucumber sliced into half circles
- 2 tbsp Carrots shredded
Dressing
- 3 tsp Extra-virgin olive oil
- 1 cloves Garlic grated
- 1/4 tsp Dijon mustard
- 1 tsp Red wine vinegar
Instructions
- Preheat oven to 350 degrees. Toss the croutons with oil and season with salt and pepper. Place on a baking sheet and bake for 10 - 12 minutes until croutons are crunchy and golden brown. Set aside to cool.
- In a bowl whisk together all the ingredients for the dressing until fully combined.
- Toss all ingredients together with the dressing before serving.
