Tomato Cotija Scramble

Ingredients

  • 1 tbsp Butter
  • 1/2 tbsp Extra-virgin olive oil
  • 4 Eggs beaten
  • 1 tbsp Cotija cheese crumbled fine
  • 2 tbsp Grape tomatoes quartered
  • 1 tbsp Fresh cilantro chopped
  • 2 slices Sourdough bread toasted and buttered if desired (or bread of your choice)
  • 1/2 Avocados sliced
  • 1 Kiwi peeled and sliced (Check the Fruit guide to substitute seasonal fruits)

Instructions

  • Heat a non-stick pan over medium heat. Once hot, melt the butter in the oil then add in the eggs. Move the eggs using circular motions with a spatula or wooden spoon to fluff up and cook, (move the pan on and off the heat as needed to prevent the eggs from overcooking or drying out). Remove the pan from the heat while the eggs are still moist. Season with salt and pepper to taste. 
  • Portion and top with cotija, tomato, and cilantro; serve with toast, avocado, and kiwi.
