Equipment

  • Espresso machine can also use an Aero Press, Moka Pot, or French Press

Ingredients

Bagel

  • 4 TBSP Whipped cream cheese more if needed
  • 2 Everything bagel halved and toasted

Espresso

  • Espresso or dark roast coffee grounds
  • Water
  • Your choice of sweetener optional
  • Your choice of creamer optional

Eggs

  • 2 TBSP Butter
  • 4 Eggs beaten
  • Salt
  • Black pepper

Instructions

  • Prepare the ingredients per the instructions above.
  • Lightly toast the bagel. Then spread the cream cheese onto the bagel.
  • Optional: Place the two halves together like a sandwich and cut in half if desired.
  • Brew and prepare the espresso according to the instructions for the equipment you are using. Pour into a cup and stir in sugar or cream if using.
  • Heat a nonstick pan over medium-low heat. Add the butter and eggs. Stir the eggs continuously using circular motions with a spatula or wooden spoon to fluff them up until they are no longer runny. Remove the pan from the heat before the eggs become dry. Season with salt and pepper to taste.
  • Serve the eggs with the bagel and espresso.
