Savory Oatmeal

Ingredients

  • 4 oz Chicken sausage links
  • 1/2 cup Oatmeal
  • 1 tbsp Butter
  • White vinegar
  • 4 Eggs
  • 1 tsp Fresh chives chopped
  • 1 tsp Everything but the bagel seasoning store bought (or make your own see notes)
  • 2 slices Sourdough bread toasted and buttered (if desired)
  • 1 Apple (Check the Fruit guide to substitute seasonal fruits)

Instructions

  • For the sausage: cook in a 400 degree oven to an internal temperature of 155 degrees using a thermometer.
  • In a pot, cook the oatmeal according to the directions on the package. Once cooked stir in the butter and season with salt and pepper to taste. Keep covered with a lid to keep warm.
  • Fill a saucepan or medium sized pot halfway with water. Bring the water to a simmer. Stir the vinegar into the water. Crack the eggs into a bowl to make sure the yolks dont break. Stir the simmering water in a circular motion then gently place the eggs into the water. (You can poach multiple eggs at once, being careful not to overcrowd the pan.) Cook the eggs in the water for 3-5 minutes, until the whites are firm. Remove the eggs with a slotted spoon onto a paper towel to drain excess water. Season with salt and pepper.
  • Place the eggs on top of the oatmeal. Top with chives, everything but the bagel seasoning, season with salt and pepper.
  • Serve with sausage, toast, and apple.

Notes

Optional make your own - Everything but the bagel seasoning - (yields 1/2 cup)
2 tablespoons poppy seeds
1 tablespoon white sesame seeds
1 tablespoon black sesame seeds
1 tablespoon dried minced garlic
1 tablespoon dried minced onion
2 teaspoons flaked sea salt or coarse salt
