Ingredients

Dressing

  • 2 TBSP Extra-virgin olive oil
  • 1 tsp Red wine vinegar
  • 1 tsp Lemon juice
  • 1 tsp Garlic grated
  • 1 tsp Dried oregano

Seasoning

  • Salt
  • Black pepper

Salad

  • 1/3 cup Sliced beets quartered
  • 2 cups Romaine lettuce chopped
  • 1/4 cup Grape tomatoes halved
  • 1/4 cup Cucumber sliced
  • 1/4 cup Red onion sliced
  • 2 TBSP Pepperoncini sliced into rings
  • 1/4 cup Green bell pepper diced
  • 1/4 cup Kalamata olives drained and halved
  • 2 TBSP Feta cheese crumbled

Pizza Rolls

  • 1 cup Mozzarella cheese shredded (use as needed)
  • 20 Wonton wrappers
  • 1/2 cup Marinara sauce use as needed, plus more for dipping
  • 20 slices Pepperoni
  • 3 cups Canola oil or preferred high smoke point oil

Coating

  • 1/4 cup Butter melted
  • 2 TBSP Parmesan cheese
  • 2 tsp Pesto sauce
  • 1 tsp Garlic grated or pressed

Soda

  • 24 oz Your choice of soda cold

Instructions

  • Make the dressing: In a bowl whisk together the ingredients for the dressing. Season with salt and pepper to taste.
  • Arrange the remaining ingredients for the salad in a bowl. Refrigerate until ready to serve.
  • Make the pizza rolls: Place about 1 tsp of mozzarella in the center of the wonton wrapper, and top with about 1 tsp of marinara sauce, then a slice of pepperoni. Lightly brush the edges of the wonton with water then fold the corners into the center. Make sure to pinch the edges tight with your fingers so the pizza roll is sealed tight. Repeat for the remaining pizza rolls.
  • Heat the oil in a pot to 375°F (190°C).
  • Place your desired amount of marinara sauce in a saucepan over low heat (about 1/4 - 1/3 cup per portion or your preferred amount).
  • Fry the pizza rolls in batches until golden brown and crispy. Be careful not to overcrowd the oil. Then set aside on paper towels to drain excess grease.
  • Dress the salad. Season with salt and pepper to taste.
  • Melt the butter in a bowl, then stir in the remaining ingredients. Toss the pizza rolls in the coating.
  • Serve the pizza rolls with sauce, salad, and soda.
