Ingredients
- 2 cups Butter lettuce chopped
- 1 tbsp Cucumber Finely chopped
- 1 tbsp Kalamata olives finely chopped
- 1 tbsp Baby carrots finely chopped
Dressing
- 1 tsp Apple cider vinegar
- 2 tsp Extra-virgin olive oil
- 1/4 tsp Dijon mustard
- pinch Dried oregano
- pinch Dried basil
Toast
- 1/4 Baguette halved and cut into 5 inch long pieces
- 2 tbsp Extra-virgin olive oil
- 3 oz Manchego cheese diced
- 1/3 cup Grape tomatoes quartered
- 2 tbsp Red onion shaved
- 1 tsp Fresh sage chopped
Instructions
- Lay down the lettuce and place chopped cucumbers, olives, and carrots on top. Whisk together all of the dressing ingredients in a bowl. Season with salt and pepper to taste. Dress the salad before serving.
- Heat the oven broiler on low. Drizzle the baguette with half of the oil. Top with cheese, tomatoes, and onion. Place under the broiler until melted and golden brown. Garnish with sage and drizzle with remaining oil. Season with cracked pepper.
- Serve the salad with manchego toast.
