Ham Scramble

Ingredients

  • 2 tbsp Whipped cream cheese
  • 1 tbsp Scallions minced
  • 1 Jalapeno Bagel cut in half and lightly toasted (or bagel of your choice)
  • 1 tbsp Extra-virgin olive oil
  • 2 oz Deli ham chopped
  • 4 Eggs beaten
  • 1/2 cup Strawberries sliced (Check the Fruit guide to substitute seasonal fruits)

Instructions

  • In a bowl mix together the cream cheese and scallions until fully combined. Season with salt and pepper to taste. Then spread onto both halves of the bagel.
  • Heat a nonstick pan on medium heat. Once hot, add the oil. Saute the ham until golden brown. Add the eggs and to the pan, stir the eggs continuously using circular motions with a spatula or wooden spoon to fluff up and cook, (move the pan on and off the heat as needed to prevent the eggs from cooking too quickly and overcooking or drying out). Remove the pan from the heat while the eggs are still moist. Season with salt and pepper to taste. 
  • Serve the eggs with bagel, and strawberries. Garnish with fresh cracked black pepper flakes if desired.
