Ingredients
Burrito
- 8 oz Chicken breast boneless skinless
- 1/2 tsp Garlic powder
- 1/4 tsp Dried oregano
- 1/2 tsp Paprika
- 2 TBSP Extra-virgin olive oil
- 1/2 cup Refried beans
- 1/2 cup Mexican cheese blend
- 2 large Tortilla wraps
- 4 TBSP Sour cream
- Hot sauce optional
Seasoning
- Salt
- Black pepper
Chips and Salsa
- 1 Tomato diced small
- 1 TBSP Red onion diced small
- 2 clove Garlic
- 1/2 TBSP Extra-virgin olive oil
- 1 TBSP Fresh cilantro chopped
- 1/2 tsp Hot sauce to taste
- 2 oz Tortilla chips
Sparkling Water
- 24 oz Sparkling water cold
Instructions
- Prep the ingredients per the instructions above.
- Preheat the oven to 350 °F (176 °C).
- Season the chicken on both sides with garlic powder, oregano, paprika, salt, and pepper. Drizzle all over with oil. Set aside.
- Make the salsa: Place all the ingredients (except the tortilla chips) into a bowl and mix well. Use hot sauce to taste. Season with salt and pepper to taste. Refrigerate until you are ready to serve.
- Heat a grill or grill pan over medium heat. Grill the chicken until nicely marked then transfer it to the oven and cook through to an internal temperature of 160°F (71°C) using a thermometer. Set aside to rest for 3 to 5 minutes before dicing into small bite-sized pieces.
- In a bowl, mix the chicken, refried beans, and cheese.
- Assemble the burritos: Lay the tortillas on a flat surface and evenly spread the chicken mixture across the center. Fold in the ends and roll up tightly.
- Place in the oven to melt the cheese, about 5 minutes.
- Serve: Enjoy the burrito (drizzle with hot sauce if desired) with chips and salsa, sour cream, and sparkling water.
