Ingredients
Green Goddess Crunch Wrap
- 1/4 cup Fresh chives finely chopped
- 1/4 cup Mayonnaise
- 1/4 cup Fresh tarragon
- 1/4 cup Greek yogurt
- 1/2 Lemon zest and juice
- 2 TBSP Extra-virgin olive oil plus more for drizzling
- Salt to taste
- Black pepper to taste
- 1/2 Lemon
- 1/2 head Butter lettuce large leaves torn
- 1/4 Cucumber thinly sliced
- 2 Tortilla wraps large
- 4 oz Fresh mozzarella sliced ¼ inch thick
- 2 cups Alfalfa sprouts
- 1 Avocado thinly sliced
- 2 oz Sour cream cheddar potato chips Ruffles or similar
Homemade Lemonade
- 16 oz Water cold
- 1 cup Lemon juice freshly squeezed
- 2 TBSP Granulated sugar (adjust to taste)
- Ice cubes
Instructions
- Prep ingredients per the instructions above.
- Make green goddess dressing: Place chives, mayonnaise, tarragon, and yogurt in a blender along with zest and juice of the lemon, oil, salt, and pepper to taste. Purée until smooth.
- Squeeze juice from the remaining lemon half over lettuce and cucumbers in a medium bowl. Drizzle with oil; season with salt and pepper. Toss to coat.
- Spread the dressing evenly onto each tortilla.
- Layer the wrap with lettuce, cucumbers, mozzarella, sprouts, and avocado. Season with salt and pepper. Fold in the ends and roll up tight.
- Combine the ingredients for the homemade lemonade. Add ice if desired.
- Serve: Cut the wrap in half. Enjoy with chips and lemonade.
