Ingredients

Cottage Cheese Toast with Tomato and Onion

  • 2 slices Your choice of bread
  • ½ cup Cottage cheese
  • 2 TBSP Red onion chopped
  • 1 Tomato small diced
  • ½ tsp Extra-virgin olive oil
  • Salt to taste
  • Black pepper to taste
  • ¼ tsp Dried oregano

Cottage Cheese Toast with Lox

  • 2 slices Your choice of bread
  • 2 oz Lox (smoked salmon)
  • ½ cup Cottage cheese
  • 2 TBSP Red onion chopped
  • 1 tsp Fresh dill roughly chopped
  • Salt to taste
  • Black pepper to taste

Fruit

  • 2 cups Fresh fruit prepared accordingly

Orange Juice

  • 16 oz Orange juice cold

Instructions

  • Prepare the ingredients per the instructions above.
  • Toast the bread slices until they reach your desired level of crispiness.
  • Spread a generous amount of cottage cheese evenly over each slice of toasted bread.
  • For the cottage cheese toast with tomato: Spread the chopped onion and diced tomato evenly over the cottage cheese. Drizzle a little olive oil over the cottage cheese layer. Sprinkle it with sea salt, black pepper, and oregano to taste.
  • For the cottage cheese toast with lox: Place lox on top of the cottage cheese. Place the thinly sliced onion on the lox. Garnish with dill, and season with salt and pepper to taste.
  • Portion the fruit.
  • Serve the cottage cheese toast alongside fruit and orange juice.
