Ingredients

Coffee:

  • Coffee
  • Your choice of sweetener
  • Your choice of creamer

Cottage Cheese Toast with Tomato and Onion

  • 2 TBSP Red onion chopped
  • 1 Tomato small, diced
  • 2 slices Your choice of bread
  • ½ cup Cottage cheese
  • ½ tsp Extra-virgin olive oil
  • Salt to taste
  • Black pepper to taste
  • ¼ tsp Dried oregano

Cottage Cheese Toast with Lox

  • 2 TBSP Red onion chopped
  • 1 tsp Fresh dill roughly chopped
  • 2 slices Your choice of bread
  • ½ cup Cottage cheese
  • 2 oz Lox (smoked salmon)
  • Salt to taste
  • Black pepper to taste

Instructions

  • Brew and prepare the coffee according to your preference.
  • Gather all the ingredients for the cottage cheese toast and place them on the kitchen counter for easy access.
  • For the cottage cheese toast with tomato and onion, finely chop the onion and dice the tomato. Set them aside.
  • For the cottage cheese toast with lox, slice the onion and roughly chop the dill. Set it aside.
  • Toast the bread slices until they reach your desired level of crispiness.
  • Spread a generous amount of cottage cheese evenly over each slice of toasted bread.
  • On half of the cottage cheese toast slices, spread the chopped onion and diced tomato evenly over the cottage cheese.
  • Drizzle a little olive oil over the cottage cheese layer.
  • Sprinkle it with sea salt, black pepper, and oregano to taste.
  • On the other slices of cottage cheese toast, place one slice of lox on top of the cottage cheese.
  • Place the thinly sliced onion on the lox.
  • Garnish with dill, and season with salt and pepper to taste.
  • Prepare the coffee with sweetener and creamer if desired.
  • Serve the cottage cheese toasts immediately alongside a hot cup of coffee. Enjoy your Christmas breakfast!
