Ingredients

  • Nonstick spray
  • 2 tbsp Thousand Island dressing use more as desired
  • 4 slices Sourdough bread or rye bread
  • 2 slices Swiss cheese halved
  • 1 cups Sauerkraut or more if desired
  • 3 oz Deli corned beef sliced thin (substitute any leftover corned beef from St Patricks day if available)
  • 2 Pickle spears
  • 1 oz Potato chips

Instructions

  • Preheat a panini style grill and lightly grease with non-stick spray.
    (Or use an oven on 350 degrees if you don't have a grill style press).
  • Spread the dressing on all slices of bread (or serve on the side if desired) use more if desired. Layer the bread with cheese, sauerkraut, and corned beef, and more cheese.
  • Place the sandwich on the grill press until golden brown and the cheese is melted.
    (If using an oven try to find something to place on top of the sandwich to press and weigh the sandwich down; for example: a heavy oven safe skillet).
  • Slice in half and serve with pickle and potato chips.
