Ingredients

FOR THE CAKE

  • 3/4 cup All-purpose flour
  • 1/2 cup Sugar
  • 1/3 cup Cacao powder
  • 1/4 tbsp Baking soda
  • 1/3 tsp Baking powder
  • 1 Egg
  • 1/3 cup Buttermilk
  • 1/3 cup Warm water
  • 2 tbsp Vegetable oil
  • 1/2 tsp Vanilla extract
  • 4 tsp Sweetened coconut flakes or more if desired

FOR THE ICING

  • 1/4 cup Cacao powder
  • 1/4 cup Powdered sugar plus a small amount more for dusting
  • 2 tbsp Orange juice

Instructions

  • Preheat the oven to 350°F. Grease a small baking dish or oven safe vessel with non-stick spray. Line with parchment if desired (to alleviate anything from sticking to the pan).
  • Mix together flour, sugar, cocoa, baking soda, baking powder, and salt using an electric mixer on low speed or whisking by hand until combined.
  • Add eggs, buttermilk, warm water, oil, and vanilla. Beat on a medium speed until smooth (this should take just a couple of minutes).
  • Place the batter in the prepared baking dish. Bake for about 20 to 25 minutes until a toothpick inserted into the center comes out clean.
  • Cool for 15 minutes and then remove the cake from the baking dish and allow to cool completely.
  • In the meantime, whisk together all of the ingredients for the icing.
  • When the cake is cool, drizzle the icing over the top and garnish with coconut if desired.

Notes

Pro Tip: If cutting this recipe into smaller portions make sure you use an appropriately sized vessel to bake in. Also, the cooking time will be reduced based on the amount of batter being used, monitor accordingly.
