Ingredients
Dressing
- 3 TBSP Extra-virgin olive oil
- 2 TBSP Red wine vinegar
- 1/2 tsp Ground cumin
Salad
- 1 Avocados pitted and diced
- 1/2 Lemon fresh squeezed
- 1 cup Grape tomatoes quartered
- 1 cup Cucumber diced
- 1 can Chickpeas drained and rinsed (based on 15oz can)
- 3/4 cup Green bell pepper diced
- 1/3 cup Kalamata olives halved
- 1/4 cup Fresh parsley chopped
- 1/4 cup Red onion sliced
- 1/3 cup Feta cheese cut into chunks
- 2 Pita bread
Seasoning
- Salt
- Black pepper
Kombucha
- 24 oz Kombucha cold
Instructions
- Prep the ingredients per the instructions above.
- Mix together the dressing ingredients in a bowl.
- Add the salad ingredients to the bowl with the dressing (except the pita). Squeeze the juice from the lemon and gently toss to combine. Season with salt and pepper to taste.
- Heat a nonstick pan on medium heat. Add a small amount of oil if desired and warm the pita on both sides. Then quarter or cut into wedges.
- Serve the salad with pita and kombucha.
