Ingredients

  • 2 tbsp Extra-virgin olive oil
  • 1/4 cup Celery chopped
  • 2 tbsp Onion chopped
  • 1/4 cup Carrots chopped
  • 4 cloves Garlic minced
  • 3 cups Chicken broth or more if needed
  • 1/4 cup Wild rice blend
  • 2 sprigs Fresh thyme
  • 4 oz Chicken breast boneless skinless diced small
  • 1 tsp Fresh sage chopped
  • Fresh parsley garnish
  • 4 Crackers

Instructions

  • Heat a pot over medium heat. Once hot, add the oil. Sauté the celery, onion, carrot, and garlic until the celery starts to soften.
  • Stir in the broth, rice, thyme, diced chicken, and sage. Bring to a simmer, stirring occasionally, until the rice is tender, about 20 to 30 minutes. Add more broth if needed. Refer to the instructions on the package for cooking time.
  • Season with salt and pepper to taste. Remove the thyme sprigs before serving.
  • Portion into bowls and garnish with parsley. Serve with crackers.
