Ingredients
- 2 tbsp Extra-virgin olive oil
- 1/4 cup Celery chopped
- 2 tbsp Onion chopped
- 1/4 cup Carrots chopped
- 4 cloves Garlic minced
- 3 cups Chicken broth or more if needed
- 1/4 cup Wild rice blend
- 2 sprigs Fresh thyme
- 4 oz Chicken breast boneless skinless diced small
- 1 tsp Fresh sage chopped
- Fresh parsley garnish
- 4 Crackers
Instructions
- Heat a pot over medium heat. Once hot, add the oil. Sauté the celery, onion, carrot, and garlic until the celery starts to soften.
- Stir in the broth, rice, thyme, diced chicken, and sage. Bring to a simmer, stirring occasionally, until the rice is tender, about 20 to 30 minutes. Add more broth if needed. Refer to the instructions on the package for cooking time.
- Season with salt and pepper to taste. Remove the thyme sprigs before serving.
- Portion into bowls and garnish with parsley. Serve with crackers.
