Ingredients
- 2 cups French fries store bought or make your own see recipe in menu
- 8 oz Chicken breast boneless skinless cut into thick strips
- 1/4 cup All-purpose flour
- 2 Eggs beaten
- 1 cup Seasoned Panko bread crumbs
- 3 cups Avocado oil
- 2 Pickle spears
- 4 tbsp Ketchup or more if needed
Instructions
- For the fries: Cook according to the directions on the package or if making your own see recipe in menu.
- Season the chicken with salt and pepper. Coat the chicken well with flour, then dip into the egg, then coat well with the breadcrumbs, pressing the breading on firmly to coat well.
- Heat the oil in a saute pan on medium heat to 325 degrees. Once hot, fry the chicken golden brown to an internal temperature of 160 degrees. Set aside on paper towels to drain excess grease and lightly season with salt.
- Serve with french fries, pickle, and ketchup.
Notes
Pro tips: If making homemade fries make enough for tomorrow's lunch. Blanch the fries for tomorrow in advance, then refrigerate and finish frying them to golden brown and crispy at lunch.
