Chicken Salad Bagel

Ingredients

  • 1/3 Lb Chicken breast boneless skinless
  • 2 Everything bagel lightly toasted, or bread of your preference
  • 2 tbsp Red onion minced
  • 2 tbsp Celery minced
  • 2 tbsp Mayonnaise or more if needed
  • 1 cups Spring mix
  • 2 slices Tomato
  • 2 slices Swiss cheese
  • 1 oz Potato chips
  • 2 Pickle spears

Instructions

  • Simmer chicken in a pot of water over medium heat to an internal temperature of 160°F. Remove from water. Dice chicken into small bitesized pieces and refrigerate to cool fully.
  • **Optional - If the bagel is too large for your preference slice out a section from the middle
  • Once cooled, thoroughly mix the chicken, onion, celery, and mayo, in a bowl. Season with salt and pepper to taste.
  • Lightly toast the bread.
  • Layer with spring mix, chicken salad, tomato seasoned with salt and pepper, and cheese. Cut in half and serve with chips and pickles.
