Chicken Fajita

Ingredients

  • 2 tbsp Extra-virgin olive oil
  • 1 cup Onion sliced
  • 1 cup Red bell pepper thinly sliced
  • 1 cup Green bell pepper thinly sliced
  • 1 lb Chicken breast boneless skinless sliced thin
  • 1/2 tsp Chili powder
  • 1/2 tsp Ground cumin
  • 1/2 tbsp Lime juice
  • 4 Tortilla wraps medium size
  • 1 tbsp Fresh cilantro chopped for garnish

Instructions

  • Heat half of the oil in a skillet or non-stick pan over medium heat. Add the onions and peppers, and season with salt and pepper. Sauté until onions are translucent and peppers are tender. Remove the pan from the heat and set aside.
  • Once the pan is hot again, add the chicken, chili powder, cumin, lime juice, and season with salt and pepper. Saute until the chicken is nicely browned and fully cooked. Then mix with the onions and peppers.
  • Heat the tortilla shells on both sides in a nonstick pan on medium heat to warm them up.
  • Serve the chicken, onions, and peppers, with the warmed tortilla. Garnish with cilantro.
