Ingredients

  • 6 oz Chicken sausage links diced
  • 2 tbsp Extra-virgin olive oil
  • 2 cups Baby spinach
  • 8 Eggs beaten
  • 4 oz Feta cheese
  • 4 Everything bagel lightly toasted (or bagel of your choice)
  • 2 cups Watermelon cut into chunks

Instructions

  • Heat the oil in a nonstick pan on medium heat. Saute the chicken sausage until it is golden brown. Add in the spinach and wilt.
  • Add the eggs to the pan. Cook, without stirring, until egg mixture begins to set, approximately 1 minute. Using a spatula, gently lift a corner of the egg up and tilt pan to allow any uncooked egg to flow underneath. Repeat this procedure until the remaining egg is cooked and no longer runny. Add the cheese and fold the omelet in half.
  • Lightly toast the bagels.
  • Portion the eggs on the bagel, cut in half and serve with watermelon.
