Ingredients
Honey Butter Pumpkin Beer Bread:
- 1.5 cup All-purpose flour
- 1.5 tsp Baking powder
- 1/4 tsp Salt
- 3 TBSP Sugar
- 1/4 tsp Ground cinnamon
- 1/8 tsp Ground nutmeg
- 1/4 tsp Ground ginger
- 1/2 tsp Baking powder
- 1/3 cup Pumpkin puree
- 1/2 cup Pumpkin beer
- 1 1/2 TBSP Unsalted butter softened
- 2 1/2 TBSP Honey
Beer Braised Chicken:
- 1/2 cup White rice
- Salt to taste
- Black pepper to taste
- 8 oz Chicken breast boneless skinless
- Salt to taste
- Black pepper to taste
- 1 TBSP All-purpose flour
- 2 slices Bacon chopped
- 1 cup Yellow onion thinly sliced
- 1 clove Garlic minced or grated
- 6 oz Pumpkin beer
- 7 oz Diced fire-roasted tomatoes
- 1 1/2 tsp Honey
- 1/3 Red bell pepper chopped
- 1/2 tsp Chili powder
- 1/4 tsp Smoked paprika
- 1 sprig Fresh thyme (or 1/2 tsp dried thyme)
- 1/8 tsp Cayenne pepper
- 1 tsp Fresh parsley roughly chopped
Fall Beer:
- 24 oz Octoberfest beer or favorite fall beer
Instructions
- Prep all ingredients per instructions above.
- Preheat your oven to 375°F (190°C). Grease a small baking dish or loaf pan.
- In a mixing bowl, combine the flour, baking powder, salt, sugar, cinnamon, nutmeg, ginger, and baking powder. Add the pumpkin and beer and mix well. Pour into a greased loaf pan. In a small bowl, combine the butter, honey and cinnamon. Pour over the top of the batter. Bake at 375 degrees for 45-60 minutes. Cool in the pan for 15 minutes before turning out the bread.
- Prepare rice according to the package instructions. Once finished, fluff with a fork, season with salt and pepper, and keep warm with a lid.
- Season each chicken breast with salt and pepper.
- Place the flour in a shallow bowl and dredge the chicken through the flour, coating it completely.
- Cook the bacon in a large pan over medium heat until crisp, about 5 minutes. Remove the bacon.
- If there's excess bacon grease, drain off all but 1 TBSP.
- Add the chicken and sear until golden brown on both sides, about 3 minutes per side.
- Remove the chicken from the skillet and set it aside.
- In the same skillet, add the onions and garlic. Cook for 5 minutes until softened.
- Reduce the heat to low.
- Add the pumpkin beer, diced tomatoes, honey, bell pepper, chili powder, paprika, thyme, cayenne, and season with salt and pepper.
- Partially cover and simmer for 20-30 minutes, or until the chicken is cooked through. Remove the chicken and shred with 2 forks pulling in opposite directions.
- Stir in the parsley and reserved bacon.
- Slice the bread, then warm in the oven if needed. Spread the softened butter over the top and drizzle with honey. Allow the honey butter to melt and soak into the bread.
- Serve the chicken and sauce over cooked rice along with a slice of bread. Enjoy your meal with a cold glass of your favorite fall beer!

Note: If you prefer a different cooking method (Instant Pot or slow cooker) for the chicken, you can adapt the steps from the reference recipe accordingly, but remember to adjust cooking times accordingly.
