Ingredients

Vegetable Hummus Wrap

  • 1 cup Arugula
  • 2 TBSP Extra-virgin olive oil
  • 1 TBSP Lemon juice
  • Salt to taste
  • Black pepper to taste
  • 2 large Tortilla wraps (whole wheat or your preferred type)
  • 1 cup Hummus
  • 1 cup Carrots shredded
  • 1 Cucumber thinly sliced
  • 1 large Tomato sliced
  • 1 Avocado ripe, sliced
  • 4 Parmesan cheese wedge slices
  • 2 oz Sour cream cheddar potato chips ruffles brand or similar

Homemade Lemonade

  • 1 cup Lemon juice fresh squeezed
  • 16 oz Water
  • 2 TBSP Sugar use to taste

Instructions

  • In a small bowl, toss the arugula with olive oil, lemon juice, salt, and pepper to make a simple dressing.
  • Lay the tortilla wraps flat on a clean surface.
  • Spread a generous amount of hummus on each tortilla wrap, covering the surface.
  • Layer shredded carrots, cucumber slices, tomato slices, and avocado slices on top of the hummus.
  • Drizzle the dressed arugula over the vegetables on each wrap.
  • Lay parmesan cheese wedge slices on each wrap.
  • Carefully roll up the wraps, folding in the sides as you go. Slice each wrap in half diagonally if desired.
  • Mix the ingredients for the lemonade. Serve over ice if desired.
  • Serve the vegetable hummus wrap with sour cream and cheddar Ruffles and lemonade.
