Ingredients

Medianoche

  • 2 Sub rolls or baguette
  • 2 TBSP Yellow mustard
  • 2 TBSP Mayonnaise
  • 8 Pickle slices
  • 4 oz Leftover roasted pork loin leftover from tuesdays lunch
  • 2 oz Deli ham
  • 4 slices Swiss cheese
  • 2 TBSP Butter
  • 4 oz Pita chips
  • 1 cup Hummus

Homemade Lemonade

  • 1/2 cup Lemon juice fresh squeezed
  • 20 oz Water
  • 2 TBSP Sugar use to taste

Instructions

  • Slice the bread in half horizontally without cutting all the way through, leaving a hinge.
  • Spread mustard and mayo on the inside of each roll.
  • Layer the roll with pickles, pork, ham, and cheese.
  • Preheat a panini grill.
  • Spread butter on the outer sides of the rolls.
  • Grill the Sandwiches on the panini until the bread is golden brown and the cheese is melted.
  • Mix the ingredients for the homemade lemonade.
  • Enjoy your delicious medianoches with pita chips and hummus and lemonade.
