Ingredients

Chicken

  • 1/2 TBSP Extra-virgin olive oil
  • 1/2 TBSP Lemon juice
  • 1/2 tsp Smoked paprika
  • 1/2 tsp Ground cumin
  • 1 cloves Garlic minced
  • 1/4 tsp Ground turmeric
  • 1/4 tsp Ground coriander
  • 1/2 tsp Kosher salt
  • 1/4 tsp Black pepper
  • 1/4 tsp Onion powder
  • 1/8 tsp Ground cinnamon
  • 1/8 tsp Red pepper flakes to taste
  • 8 oz Chicken breast boneless skinless

Tzatziki Sauce

  • 1 clove Garlic minced
  • 1/4 tsp Fresh dill
  • 1/2 cup Greek yogurt
  • 1/2 tsp Lemon juice
  • Salt to taste
  • Black pepper to taste

For Serving

  • 2 Pita bread
  • 3/4 cup Romaine lettuce shredded
  • 1/4 cup Red onion thinly sliced
  • 4 Grape tomatoes quartered
  • 1/4 cup Kalamata olives
  • 2 TBSP Feta cheese
  • 2 oz Pita chips
  • 1/2 cup Hummus

Homemade Lemonade

  • 1/2 cup Lemon juice fresh squeezed
  • 16 oz Water
  • 2 TBSP Sugar use to taste
  • Ice cubes optional

Instructions

  • Make the Chicken: In a bowl, mix together all the ingredients for the chicken. Season with salt and pepper. Marinate for 20 minutes. While the chicken is marinating, make tzatziki sauce.
  • Make Tzatziki Sauce: Place all ingredients in a blender; blend until smooth. Taste and add more seasoning (lemon juice, garlic, salt, pepper) if needed. Refrigerate until you are ready to serve.
  • Heat a pan on medium heat.
  • Cook Chicken: Remove chicken from the marinade, letting any excess sauce drip off. Brown chicken until cooked through to an internal temperature of 160°F (71°C) using a thermometer. Remove to a plate to rest before chopping into bite-sized pieces.
  • Assemble Gyro: Warm the pita on both sides in a pan over medium heat. Layer with lettuce, chicken, red onion, grape tomatoes, olives, feta, and sauce.
  • Mix the ingredients for the lemonade. Serve over ice if desired.
  • Serve: Enjoy gyro with pita chips, hummus, and homemade lemonade.
